UBE FLAN CAKE RECIPE

Ingredients

For the Flan Layer:
• 5 large eggs
• 1 can (12 oz) evaporated milk
• ½ cup granulated sugar
• ¼ cup sweetened condensed milk

For the Ube Cake Layer:
• ¾ cup all-purpose flour
• ½ cup ube jam (or halaya)
• ¼ cup whole milk
• ¼ cup vegetable oil
• ¾ tsp baking powder
• ¼ tsp salt
• 1 tsp ube extract (optional, for color and flavor)

Instructions

1. Prepare the Caramel
1. In a saucepan, melt ½ cup white sugar over medium heat until it turns golden brown.
2. Quickly pour the caramel into a round cake pan, swirling it to coat the bottom evenly.
3. Set aside to cool and harden.

2. Make the Flan
1. In a bowl, whisk together 5 eggs, evaporated milk, condensed milk, and sugar until smooth.
2. Strain the mixture through a fine sieve to remove bubbles or lumps.
3. Gently pour this mixture over the hardened caramel in the cake pan.
4. Set aside while you prepare the ube batter.

3. Make the Ube Cake Batter
1. In a separate bowl, combine ube jam, milk, and oil. Mix until smooth.
2. Add flour, baking powder, salt, and ube extract (if using). Mix just until combined — don’t overmix.
3. Carefully pour this batter over the flan mixture in the pan using a ladle or spoon (pour slowly to prevent mixing of layers).

4. Bake the Cake
1. Cover the cake pan tightly with aluminum foil.
2. Place the pan in a larger baking dish and pour hot water into the outer dish (about halfway up the sides of the pan).
3. Bake in a preheated oven at 350°F (175°C) for 50–60 minutes, or until a toothpick inserted in the center comes out clean.

5. Cool and Serve
1. Let the cake cool completely, then refrigerate for at least 2 hours.
2. To serve, run a knife around the edges of the pan to loosen the cake.
3. Place a plate on top of the pan and invert quickly to release the cake — the flan will be on top, and the ube cake will be at the bottom.

🍮 Tips
• You can add a bit of vanilla extract to the flan for extra aroma.
• For a smoother flan, make sure to strain the mixture before baking.
• Chill before slicing for clean layers.
