Avocado Chicken Salad

Ingredients:

2 cups cooked chicken, shredded
2 ripe avocados, peeled and diced
1/4 cup red onion, finely chopped
1/2 cup cherry tomatoes, halved
2 tablespoons fresh cilantro, chopped
Juice of 1 lime
2 tablespoons olive oil
Salt and pepper to taste

Directions:

In a large mixing bowl, combine the shredded chicken, diced avocados, chopped red onion, and cherry tomatoes.
Add the fresh cilantro for a burst of flavor.
In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
Pour the dressing over the chicken mixture.
Gently toss everything together until well combined.
Serve immediately or chill in the refrigerator for a refreshing, healthy salad!
