For the Garlic Butter Chicken:
2 boneless, skinless chicken breasts
1 teaspoon Italian seasoning
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
2 tablespoons butter
2 cloves garlic, minced
1 tablespoon olive oil
For the Creamy Ricotta Alfredo Pasta:
12 oz fettuccine or your favorite pasta
1 cup ricotta cheese
1 cup grated Parmesan cheese
1 cup heavy cream
2 tablespoons butter
3 cloves garlic, minced
½ teaspoon salt (adjust to taste)
½ teaspoon black pepper
¼ teaspoon nutmeg (optional)
½ cup reserved pasta water (if needed for consistency)
Fresh parsley or basil for garnish
✅Instructions:
1. Prepare the Chicken:
1. Pat the chicken breasts dry with a paper towel.
2. Season both sides with Italian seasoning, salt, black pepper, and garlic powder.
3. In a large skillet over medium heat, melt 1 tablespoon of butter with 1 tablespoon of olive oil.
4. Add the chicken breasts and cook for about 6-7 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F (75°C)).
5. In the last 2 minutes of cooking, add the minced garlic and the remaining 1 tablespoon of butter, basting the chicken with the melted garlic butter.
6. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
2. Cook the Pasta:
1. Bring a large pot of salted water to a boil.
2. Cook the fettuccine according to the package instructions until al dente.
3. Reserve ½ cup of pasta water, then drain the pasta and set it aside.
3. Make the Ricotta Alfredo Sauce:
1. In the same skillet used for the chicken, melt 2 tablespoons of butter over medium heat.
2. Add the minced garlic and sauté for 30 seconds until fragrant.
3. Pour in the heavy cream and stir well.
4. Add the ricotta cheese and Parmesan cheese, stirring continuously until smooth and creamy.
5. Season with salt, black pepper, and nutmeg (if using).
6. If the sauce is too thick, gradually add the reserved pasta water until you reach the desired consistency.
4. Combine and Serve:
1. Add the cooked pasta to the sauce, tossing to coat evenly.
2. Slice the garlic butter chicken and place it on top of the pasta.
3. Garnish with fresh parsley or basil and extra Parmesan cheese.
4. Serve warm and enjoy!
