Ingredients:
For the Plate:
đĨ 2 large eggs, soft-boiled and halved
đĨ 1/2 cucumber, sliced

1 ripe tomato, sliced
đĨ 1/2 avocado, mashed
đ 1 slice whole-grain bread, lightly toasted
đ§ 1/4 cup feta cheese, cubed
đĢ A handful of mixed olives (green and Kalamata)

Instructions:
Step 1: Boil the Eggs đĨ
Bring a pot of water to a boil.
Carefully add the eggs and cook for 6-7 minutes for soft-boiled eggs.
Transfer the eggs to cold water to cool, then peel and cut them in half.
Step 2: Prepare the Toast đđĨ
While the eggs are boiling, toast the whole-grain bread.
Spread the mashed avocado over the toast and top with sliced tomatoes.
Season with salt and pepper to taste.
